If you’ve been around for any length of time, then you know we are not vegan or vegetarian. However, going an entire week with no animal products in your dinner is a great way to boost your phytonutrient intake.

How to Stay Organized for our Vegetarian Meal Planner

What works for our family is staying really organized by sticking to a basic weekly dinner plan. In this case: a vegetarian meal planner that contains no animal products. Thankfully, vegetarian does not mean that you’ll be eating a bunch of salads this week.

Clean Cuisine Basic Weekly Dinner Plan

In general, we have a weekly dinner plan that helps us choose recipes for each night of the week. We do most of our shopping on the weekends, which means having this vegetarian meal planner set up from Monday – Sunday works perfect for us. 7 Day Vegetarian Meal Planner for Dinner

This week, we’re back in the 40’s as I prepare my gluten free meal plan for the week. Everyone in our home is gluten free, by choice. About 8 years ago, I removed gluten from my diet to improve my autoimmune symptoms. Then my husband and children followed a few years later. It is amazing to see the big differences in my gut health by removing gluten.

So, this week is all about a vegetarian meal planner. Not only are all of these recipes vegetarian, but they also do not contain any gluten, dairy or refined sugar!

MONDAY – Meat free

Since we’re doing meat free all week, let’s start off with an easy “breakfast for dinner” recipe. This Quiche with Spinach Recipe is gluten free and dairy free. The crust is made with a delicious almond and brown rice mixture. We’ve added lots of vegetables that you can choose to keep or omit.

Pair this with a simple Blackberry Smoothie that has hidden cauliflower inside. It’s so delicious and satisfying and pairs nicely with your savory quiche.

TUESDAY – Stir Fry

Vegetable stir fry is one of those essential recipes that everyone should know how to make. It’s a great way to add a side of vegetables to your meals or add a protein and make it a main course. Pair this with our homemade Cauliflower Fried Rice or a bed of brown rice cooked in our favorite rice cooker from VitaClay.

WEDNESDAY – One Dish Wonder

THURSDAY – Around the World

In my opinion, a daily serving of beans is one of the most important things you can do for your health. Especially with this Vegetarian Meal Planner where we use the beans to boost the protein this week.

FRIDAY – Fish

We’re skipping the fish this week as we focus on serving up Vegetarian Meals. So, let’s have some fun and enjoy these deliciously savory Stuffed Acorn Squash for dinner. This Vegetarian Meal Planner Friday delight is nutrient dense and loaded with flavor. Have fun trying other vegetables, some quinoa or brown rice.

SATURDAY – Burgers

We are all in on this Vegetarian Meal Planner and refuse to leave you with a salad on Burger Saturday. If you’ve never had a Black Bean Burger — this is going to be a deliciously, satisfying dinner for you. But, if you’ve had a Black Bean Burger and didn’t care for it, then please give us a chance. This is the perfect vegetarian meal without even trying. YUM!

Be creative and try out these Vegetarian Stuffed Mushrooms loaded with savory peppers and make a Caesar side salad using our dairy-free Caesar dressing recipe.

SUNDAY – Chili

One of my favorite ways to boost plant protein is making a bean chili. This Vegetable Chili Recipe loaded with Mexican flavors and topped with your choice of dairy free sour cream, avocado, cilantro and a side of homemade tortillas. If you make a double batch of chili and tortillas, you’ll have leftovers for at least 2 more meals!

To wrap up this week’s vegetarian meal planner, consider one (or two) of our favorite desserts that are gluten free and dairy free.

Magic Cookie Bars – chewy and delightful with chocolate!

Thumbprint Cookies with Chocolate – Easy to make and ready to enjoy in just 25 minutes. I love making a double batch of these too.

Peanut Butter Chocolate Chip Cookies – flourless and full of creamy almond and/or peanut butter – these cookies are a definite hit.
