Chicken Tortilla Soup for Crock Pot – This homemade recipe for chicken tortilla soup is made in the crock pot. How to Make Chicken Tortilla Soup for Crock Pot

It’s almost too easy to make this chicken tortilla soup for crock pot slow cooking between 3-8 hours depending on what type of crock pot you have. In general, you’re going to open a bunch of bpa-free, organic cans and dump them together. Add some chicken and chicken or bone broth and done.

Then, gather your toppings — this is what we use:

  • homemade lime crema
  • homemade tortilla chips
  • fresh avocado with sea salt and lime juice
  • fresh cilantro chopped into small pieces

4 Easy Steps to Making Homemade Chicken Tortilla Soup for Crock Pot

You can make this in a crock pot/slowcooker or try our VitaClay pot shared about. The benefit to the VitaClay pot is the clay insert and dramatically reduced cooking time. See below for the 4 simple steps to making homemade chicken tortilla coup for crock pot or VitaClay.

  1. To a slow cooker or the VitaClay clay pot, add the rotel, drained blacks beans, drained pinto beans, corn, enchilada sauce and chicken broth. Stir to combine.
  2. Place the chicken on top of the mixture and gently push until fully submerged.
  3. Cover and set your crock pot on low for 8 hours or high for 4 hours. For the VitaClay, set the cooker to “slow cooker/stew” and set for 3 hours.
  4. Once done, use a fork to remove the chicken from slow cooker and shred in a bowl. Return to the slow cooker and combine. Serve warm.

Fresh cilantro – Just grab a bunch of cilantro and start chopping away. We LOVE to sprinkle fresh cilantro whenever possible. It’s a very strong flavored herb, but perfect for all of our Mexican-inspired dishes.

What to Pair with Chicken Tortilla Soup

Naturally, these homemade salty Tortilla Chips are the perfect addition, but you can also make a side salad with our homemade ranch (that is to die for!), or either our grain free biscuits or gluten free biscuits.

Notes

Rotel substitute: If you would prefer to not use Rotel, you can substitute with 10 oz diced tomatoes, 10 oz tomato puree, 10 oz classic salsa and 4 oz of green chilies.
