Brussels Sprouts Salad
Up until I created this salad, I never considered eating raw brussels sprouts before. I’m so used to my go-to method of pairing them with turkey bacon, that it simply never crossed my mind (click here for the Roasted Brussels Sprouts with Bacon Recipe). While cooked brussels sprouts are delicious, raw brussels sprouts offer an entirely new fresh flavor and texture! And while raw vegetables aren’t necessarily always healthier than cooked veggies (click here for more information), switching up how you consume different plants from time-to-time can be a delicious and healthy way to add some variety to your meals!
Like mentioned above, this salad is far from boring, and is loaded with a variety of veggies, fruit, and seeds, among much more! When it comes to our diets, variety is important for many reasons! We truly love to live by the saying: “eat the rainbow” in regards to fruit and veggies. The more variety in color you can consume from fruits and vegetables the greater your exposure to a vast array of the anti-aging, disease-fighting and anti-inflammatory phytonutrients found in these superfoods (click here to learn more about why variety is so important). With colorful nutrition in mind, this recipe for Brussels Sprouts Salad is sure to offer just as much flavor as it does health benefits! Let’s take a closer look at what exactly went into this recipe:
Kale
One of the bases of this recipe, and so fresh and clean! Kale is one of the most nutrient-dense plants. It’s packed with fiber, vitamin C, vitamin A and vitmamin K. It’s also an excellent resource of magnesium and at least 45 different polyphenols. So not only is it a highly nutritious veggie, it’s also versatile, and delicious!
Brussels Sprouts
Brussels Sprouts are full of antioxidants, vitamins, minerals, as well as fiber, and much more! They’re also a cruciferous vegetable, which are very anti-inflammatory, and have properties known to fight cancer.
They are an excellent veggie to add in more of, and the flavor, when used in a tasty recipe, is unmatched!

Cranberries are loaded with health benefits. Packed with Vitamin C, E, K1, as well as copper, and manganese, these tiny berries offer a major nutrition punch! However, the dried type can be incredibly high in added sugar…unless you are intentional about which brand you use!

Sweet potatoes give this Brussels Sprouts Salad a good dose of healthy starches, as well being a great source of fiber, vitamins, minerals, and even some protein!

Brussels Sprouts Salad
This Brussels Sprouts Salad is a crisp, and refreshing way to pack in a hefty serving of greens for the day!

- Cook Time: 50 minutes
- Total Time: 1 hour
- Yield: 1–2 servings 1x
Ingredients
- 2 cups brussels sprouts, or approx. 10 brussels sprouts, shredded
- 3 cups kale, shredded
- 1 apple, diced
- 1/2 cup dried cranberries
- 1 small sweet potato
- 1/4 cup red onion, diced
- 1/4 cup sunflower seeds
- 1/4 cup vegan cheese, try this recipe, or buy here for a ready-made version
- 4 tablespoons homemade balsamic vinaigrette
Instructions
- Begin by lining a baking sheet with parchment paper, and heat oven to 425ºF.
- Wash sweet potato, and poke holes using a fork.
- Place on baking sheet, and bake for 50 minutes, or until soft. Remove from oven, and let cool.
- While sweet potato is baking, use either a grater or a food-processor with the shredding blade to shred brussels sprouts and kale. If using a grater, simply cut kale into small shreds by hand. Place in a salad bowl to toss.
- Dice the apple, onion, and sweet potato (once cooked), and slice the vegan cheese, combining together in the salad bowl.
- Add in sunflower seeds and dried cranberries.
- Drizzle salad with balsamic vinaigrette, and toss all ingredients to combine.
- Serve immediately, and enjoy!
