Up until I created this salad, I never considered eating raw brussels sprouts before. While cooked brussels sprouts are delicious, raw brussels sprouts offer an entirely new fresh flavor and texture! And while raw vegetables aren’t necessarily always healthier than cooked veggies (click here for more information), switching up how you consume different plants from time-to-time can be a delicious and healthy way to add some variety to your meals!

Brussels Sprouts in Salad
This Brussels Sprouts in Salad Recipe is a crisp, and refreshing way to pack in a hefty serving of greens for the day!

- 2 cups brussels sprouts, or approx. 10 brussels sprouts, shredded
- 3 cups kale, shredded
- 1 apple, diced
- 1/2 cup dried cranberries
- 1 small sweet potato
- 1/4 cup red onion, diced
- 1/4 cup sunflower seeds
- 1/4 cup vegan cheese, try this recipe, or buy here for a ready-made version
- 4 tablespoons homemade balsamic vinaigrette
- Begin by lining a baking sheet with parchment paper, and heat oven to 425ºF.
- Wash sweet potato, and poke holes using a fork.
- Place on baking sheet, and bake for 50 minutes, or until soft. Remove from oven, and let cool.
- While sweet potato is baking, use either a grater or a food-processor with the shredding blade to shred brussels sprouts and kale. If using a grater, simply cut kale into small shreds by hand. Place in a salad bowl to toss.
- Dice the apple, onion, and sweet potato (once cooked), and slice the vegan cheese, combining together in the salad bowl.
- Add in sunflower seeds and dried cranberries.
- Drizzle salad with balsamic vinaigrette, and toss all ingredients to combine.
- Serve immediately, and enjoy!
