Carrot Soup

Welcome spring with this creamy and delicious Carrot Soup! If you’re anything like us, soup is an all-year-round food. Not only is it a great way to pack in nutrients, but it is such an easy meal to throw together at the beginning of the week, and enjoy for days!

Subtly sweetened with apples and honey, and filled with hemp seeds for an extra superfood boost, this light soup is one you and you’re entire family will love!

We know just how time consuming clean eating can get if you’re cooking each and every meal on a daily basis. We’ve been there, and it is most definitely not sustainable. Because of this, we make it a point to cook large amounts on the weekends, and store them for quick meals all week long.

For soups like this, I find it most efficient to make a double batch, and place half in the freezer, and the other half in the fridge. This way, I cook once, and end up getting a couple of weeks out of my time!

As this is a Carrot Soup, carrots are the main ingredient in this recipe. While carrots are a highly nutritious vegetable, we still often get the question, are carrots healthy? Let’s explore that!

Are Carrots Healthy?

This is a question we actually receive quite frequently. And we understand why! You may be concerned about sugar, carbs and weight gain wonder whether or not carrots are truly a healthy food. Guess what? They are!

Carrots also have a ton of fiber, anti-aging and disease-fighting phytonutrients, a hefty dose of potassium and a little calcium and magnesium, among so many other benefits.

Like mentioned above, this soup is extra nutritious, packed with fruit, veggies, and lots of creamy and antioxidant-rich hemp seeds! So what do hemp seeds add to this recipe?

Benefits of Hemp Seeds

Hemp seeds are an exceptional source of omega-3 and omega-6 fatty acids, are full of protein, and a great source of numerous vitamins and minerals (read more here). So not only do these itty bitty seeds pack an incredible nutrition punch, but they are surprisingly versatile from a culinary standpoint. When pureed with a bit of water in a high-speed blender (such as this one) or with a handheld stick blender, hemp seeds lend a lovely rich and milky cream quality.

They are delicious in soups, smoothies and baked goods. Along with cashew milk, hemp milk is one of those culinary staples that really make clean eating and going dairy-free a whole lot easier (click HERE to read more about why we are not big on dairy). Hemp and cashew milk are the perfect, creamy substitutes!

Carrot Soup

Ring in spring with this creamy and delicious Carrot Soup! This soup is filled with fruit, veggies, and hemp seeds for a superfood boost.

  • Cook Time: 15 minutes
  • Total Time: 20 minutes

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon freshly grated ginger
  • 1 medium-sized onion, chopped
  • 1 & 1/4 pounds carrots, peeled and chopped
  • 4 cups organic vegetable broth
  • 3 Granny Smith apples, cored and chopped, no need to peel
  • 1 teaspoon cardamom
  • 2 teaspoons raw honey
  • Juice from 1 whole lime
  • 1/4 cup hemp seeds
  • White pepper, to taste

Instructions

  1. Heat the oil in a large heavy saucepan over medium- heat.
  2. Add the ginger and sauté 30 seconds.
  3. Add the onions and sauté 4-5 minutes, or until soft.
  4. Add the carrots, broth, apples, cardamom, honey, and lime juice. Cover, reduce heat and simmer until carrots are tender, about 10 minutes.
  5. Add the hemp seeds.
  6. Use a handheld stick blender or high power blender (like this one) to process the soup until smooth and creamy.
  7. Season with white pepper to taste.
  8. Serve warm or cold.

I'm excited to try this recipe, but am wondering if you have a substitute suggestion for the vegetable broth. I cannot use commercially available vegetable broth as I cannot seem to find any that does not include tomato -- which I am allergic to. I could make my own, but it defeats the purpose of this being an easy and quick recipe.

Hi, Tami!

While I've not experimented with anything other than vegetable broth in this particular recipe, I have replaced vegetable broth with chicken stock in other carrot soup recipes I've tried, and they have turned out great! I like Pacific Foods Organic Unsalted Chicken Stock.
