How to Make this Pumpkin Chocolate Chips Cookies Recipe

This recipe is so easy to make – one mixing bowl along with a hand mixer or stand mixer. Within 15 minutes, you can have these ready to bake. Here’s the simple instructions to get your cookies in the oven as quickly as possible:

  1. Preheat the oven to 350 and line 2 stoneware baking pans with unbleached parchment paper. In a large mixing bowl, add the pumpkin puree, coconut sugar and softened coconut oil.
  2. Using a hand mixer or stand mixer, combine on medium speed for 2 minutes. Add the pastured egg and vanilla and mix again.
  3. To the pumpkin mixture, add the gluten free flour, pumpkin pie spice, baking powder, baking soda and sea salt. Mix on low speed until just combined.
  4. Add the white chocolate chips and stir by hand.
  5. Using a medium sized (2 tablespoon) cookie scoop, place the dough on the parchment paper. On the baking pans linked above, I will do 2 rows of 4 with a row of 3 in the middle to create enough space.

Healthy and Clean Ingredients

For this recipe (and all of our cookie recipes, we opt for simple swaps to remove the refined white sugar, brown sugar and shortening. With just a little bit of effort, these cookies are much, much healthier than the traditional pumpkin chocolate chips cookies recipe.

#1: Use Whole Grain Gluten Free Flour Instead of Wheat Flour

I swapped out the traditional wheat flour with whole grain, gluten free flour made by King Arthur Flour. The flour is a cup-for-cup replacement for any of your other cookie recipes that call for flour.

#2: Always, Always Bake with Extra Virgin Coconut Oil

If you’ve not tried coconut oil before, I want to encourage you to pick up a small coconut oil oil from Nutiva Organics and experiment with it. I’m going to venture to say that coconut oil makes even better cookies than butter. Trust me, a few years ago I doubted this myself.
