The heat is on where we live in super sunny North Palm Beach, Florida and the last thing I have felt like doing lately is standing over a hot stove. Although the official first day of summer isn’t until June 21st, since it is blazing hot outside and our son just finished his last day of school, it feel like summer to me! Time to start digging up my favorite no-cook, easy summer recipes…

With perfect chin-dripping peach season almost ripe upon us, why not try something light and peachy?

A fun twist on traditional gazpacho, the recipe below for refreshing chilled Peach and Basil Gazpacho is a delicious starter dish for everyday summer meals and just the thing for effortless entertaining too!

Easy No-Cook Summer Recipe: Peach and Basil Gazpacho
Serves: 6

  • 1 cup raw walnuts
  • 1 large cucumber, peeled and chopped
  • 2 cups organic peaches, peeled and chopped
  • ¼ cup chopped shallots
  • 1 yellow bell pepper, chopped
  • 2 tablespoons fresh lemon juice
  • 1 cup fresh basil
  • 1 cup water
  • Unrefined sea salt to taste


Place all ingredients in a Vitamix or high speed blender; process until smooth and creamy. Transfer to a covered container and refrigerate before serving. Serve chilled.
