Broccoli Soup without Cream
Broccoli soup should be a highly nutritious soup that tastes just as delicious as it is healthy. However, most classic broccoli soup recipes are full of inflammatory ingredients like cheddar, heavy cream and/or lots of butter. Some of these recipe even include wheat. Totally unnecessary!
Here at Clean Cuisine, we truly believe that dairy is much more harmful than it is beneficial for the human body. Because of this, we made this Broccoli Soup without Cream! Although this recipe is free of dairy, we most definitely did not compromise on flavor or the creamy texture of this soup. We simply swapped out the cream for a vegan alternative!
How to Make Broccoli Soup without Cream
If you are trying to eat clean, then eliminating the dairy from this creamy Broccoli Soup is the only real change you need to make from the classic recipe. Dairy, alongside wheat flour if a recipe calls for it. Our recipe is easy, simple, and to-the-point. No long ingredient list or intricate cooking instructions for this soup. Nobody has all day everyday to spend in the kitchen, so in our book, the easier and quicker the recipe, the better!
If you’ve been around for awhile, then you know we love nut-based and plant-based milks like this Homemade Cashew Milk recipe. This recipe is so basic I am hesitant to even call it a “recipe”! All you do is process the cashews with water in a high speed blender, and voila, you have homemade cashew milk! It really is that easy!
Thanks to the rich, creamy texture and neutral flavor of cashew milk, this cleaned up Broccoli Soup tastes just like the traditional version you may have grown up eating and loving. All of the flavor, without the negative health effects!
Ingredients in Broccoli Soup without Cream
Simple with a short ingredient list, here are all of the ingredients you’ll need to make this thick and creamy, Broccoli Soup without Cream:
Broccoli: Quite self explanatory, you can’t have a Broccoli Soup Recipe without broccoli! Broccoli is a high-fiber veggie packed full of antioxidants, vitamins, and minerals. Add more broccoli into your diet, and your body will thank you!
Cashews + Water: The “cream” in this Broccoli Soup Recipe is made out of just cashews, and water! While it may sound too good to be true, cashews really are the perfect nuts for making nut butters, cheeses, and cream. Their creamy texture sets them apart, and allows for so much creativity in the kitchen!
Vegetable Broth: Keeping this recipe vegan, our Broccoli Soup without Cream calls for vegetable broth for some thinning, extra flavor, and a major nutrition boost!
Onions: Instead of onion powder, we opted for whole, fresh onions in this recipe for flavor, and freshness!
Leeks: While many people describe leeks as a mild tasting onion, they really do offer a great compliment to light soups like this one! Mild, yet full of flavor, if you’ve never used leeks before, now is a great time to begin experimenting!
Celery: Just 1/2 cup of celery adds a lot of flavor to this recipe! Offering anti-inflammatory benefits, antioxidants, and the ability to help foster healthy digestion, celery is another raw veggie you should consider enjoying on a regular basis!
Sea Salt, White Pepper, + Garlic: Finishing off the recipe with some flavor boosters, sea salt and white pepper should be enjoyed to taste, and are amazing ways to make a good meal great! If you love your food extra garlicky, feel free to add in a couple of extra garlic cloves as well!
