While years ago I wouldn’t think twice about downing a big serving of chocolate mousse, these days, I put my health first. After developing an autoimmune disease, I began to make the connection between food and how I felt, and all of a sudden, my past indulgences seemed a lot less…indulgent. When you get pain from certain foods, those foods seems much less appealing.

Although delicious, most chocolate mousse recipes are nowhere near anti-inflammatory or healthy. Filled with dairy, refined-sugar, and eggs (eggs aren’t bad for everyone, but cause me major inflammation), the entire premises of this kind of dessert is an absolute no go for me! With so many dietary limitations that were making me feel held back, I decided to focus swaps instead of eliminations and depriving myself of cravings.

So while I can’t enjoy a conventional chocolate mousse, I CAN enjoy this Chocolate Mousse Recipe…

Swap Dairy Cream for Coconut Cream

Here are Clean Cuisine, we don’t fall for the hype about all the health benefits of dairy-based milk. There’s simply too many replacements that offer superior benefits, without all of the negative effects of dairy.

But don’t worry, we absolutely do not avoid recipes with cream. We simply swap conventional cream for coconut cream!

Refrigerated overnight, and whipped to creamy perfection, the coconut cream in this recipe is the base of what gives this recipe its mousse like texture. We love full fat coconut cream without any additives for the absolute healthiest option!

We also added a bit of plant-based milk in this Chocolate Mousse Recipe to thin the coconut cream out for the perfect mousse texture. Coconut cream and almond milk combined work together to seamlessly take the place of all dairy.

Easy Chocolate Mousse Recipe

  • Total Time: 15 minutes

Ingredients

Instructions

  1. Place an unopened can of coconut cream into the fridge the night before you plan to make this recipe. When you open it the next day, the fatty part of the coconut cream will have separated from the water.
  2. Spoon out the fatty part of the coconut cream into a large mixing bowl. Freeze the leftover coconut water in ice cube trays to add to smoothies in the future.
  3. Mix the almond butter, almond milk, maple syrup and vanilla in a small saucepan. Stir over medium heat until the ingredients are just combined, about 2 minutes. Remove it from the heat. Stir in the cacao powder and espresso powder (optional).
  4. Using the whipping attachment on your mixer, whip the coconut fat into a cream on high speed. (Note: this takes me a good 5-minutes every time) The end result should resemble a whipped creamy made from heavy dairy cream.
  5. Slowly and gently fold the almond butter mixture into the whipped cream. *if you prefer the multi-shade effect as pictured, see notes below.
  6. Scoop the mousse into individual serving bowls and refrigerate until you are ready to serve.

Notes

If you prefer the multi-shade stacked effect as pictured in this post, complete the following steps:

#1: Complete step 5, and scoop half the mousse into a bowl, and set aside, leaving the other half of the mixture in your mixing bowl.

#2: Add 3 additional tablespoons of cacao powder to the mixture remaining in the mixing bowl, and mix until smooth.

#3: Proceed to step 6, layering as desired.

    I’m looking for chocolatey sugar-free, grain free desserts! However, I have a strong aversion to coconut!! What can I substitute in this wonderful chocolate mousse to get similar results?

      Hi Judith, Hmmmmm….great question! I am sure whipped cream would work (but that isn’t exactly “clean cuisine” lol!), but, you might actually have luck with whipping avocados. I am not 100% certain of this, but avocados do have a somewhat similar texture to coconut milk once the liquid has been drained. If you give this a try please let me know how it turns out!
