Because of this, I’ve put a totally new spin on this classic dinner recipe! Just as creamy and delicious, but without all the tummy upset that normally follows. Chicken Artichoke Recipe
While many recipes require a total health makeover that requires a lot of creativity, this Chicken Artichoke Recipe only needed a few easy swaps to clean it up! That’s because to make the perfect chicken artichoke recipe, you need only a few staple ingredients. These ingredients really boil down to cream, chicken, artichokes, spinach, and spices.
Having been dairy-free for many years now, I’ve had lots of time to experiment with alternatives to milk, cream, and cheese. Personally, I find coconut cream to be the perfect dairy-free (and nut-free for those avoiding nuts) alternative to cream! Rich and creamy in flavor, coconut cream is the perfect neutral base for any sweet or savory recipe where cream is needed.
After replacing the cream, creating my own healthy Chicken Artichoke Recipe from scratch really just required some trial and error until I found the perfect flavor that I loved best.

The Best Cookware
You can choose clean foods all day long, but true clean eating begins with clean cookware! Chicken Artichoke Recipe
This dairy and gluten-free Chicken Artichoke Recipe is smothered in a creamy spinach and artichoke cream sauce!
- Prep Time: 5 minutes
- Cook Time: 25 minutes
- Total Time: 30 minutes
- Yield: 4 servings 1x
Ingredients
- 1 pound pastured chicken thighs
- 1.5 cups coconut cream
- 1 tablespoon minced garlic
- 1 teaspoon Himalayan pink salt, plus more to taste
- 12 ounces artichoke hearts, frozen or canned
- 2 cups fresh spinach, packed
- Avocado oil, enough to sear chicken
Instructions
- Begin by heating a thin layer of avocado oil in a skillet on medium heat, and add chicken thighs.
- Sear chicken, around 5 minutes on each side.
- Turn burner to a medium/low heat, and add in coconut cream, artichoke hearts, spinach, minced garlic, and salt. Cover, and allow to simmer for 15-20 minutes, or until artichokes are thawed, spinach is wilted, and chicken is thoroughly cooked.
- Once chicken is thoroughly cooked, remove skillet from heat, and serve dish warm. Enjoy!
