Chicken Artichoke Recipe

This dairy and gluten-free Chicken Artichoke Recipe is smothered in a creamy spinach and artichoke cream sauce!

Ingredients

  • 1 pound pastured chicken thighs
  • 1.5 cups coconut cream
  • 1 tablespoon minced garlic
  • 1 teaspoon Himalayan pink salt, plus more to taste
  • 12 ounces artichoke hearts, frozen or canned
  • 2 cups fresh spinach, packed
  • Avocado oil, enough to sear chicken 

Instructions

  1. Begin by heating a thin layer of avocado oil in a skillet on medium heat, and add chicken thighs.
  2. Sear chicken, around 5 minutes on each side.
  3. Turn burner to a medium/low heat, and add in coconut cream, artichoke hearts, spinach, minced garlic, and salt. Cover, and allow to simmer for 15-20 minutes, or until artichokes are thawed, spinach is wilted, and chicken is thoroughly cooked. 
  4. Once chicken is thoroughly cooked, remove skillet from heat, and serve dish warm. Enjoy!
