A Quick and Healthy Family Dinner Recipe

Typically I make a recipe several times before I am committed to sharing it here at Clean Cuisine. But this Mexican-inspired chili stovetop recipe is the exception. The first night I made it, everyone in my family was exclaiming how wonderful and delicious it was. So, I quickly wrote down the recipe from what I could remember — made it one more time. And here it is.

The night I stumbled upon this recipe, I was trying to make a hearty, healthy dinner quickly so our kids could get to soccer practice on time. The combination of grass fed beef, beans and vegetables is perfect for endurance and training. With very little oil and no processed foods, this was the perfect quick dinner recipe loaded with Mexican-inspired flavor.

How to Make This Chili Stovetop Recipe

In just a few simple steps, you can have this Mexican-inspired chili stovetop recipe simmering on low in less than 20 minutes.

  1. In a 5.5 quart stock pot over medium heat, add the extra virgin olive oil, diced white onion and red pepper and season with sea salt and black pepper. Cook until the onions are translucent for about 3-5 minutes.
  2. Using a garlic press to mince the garlic cloves, add to the stock pot and continue to cook for 1 minute.
  3. Add the ground beef and brown thoroughly for an additional 4-6 minutes.
  4. To the stock pot, add the 2 tablespoons of homemade taco seasoning along with the drained black beans, pinto beans, tomato puree, diced tomatoes and frozen corn. Mix until well combined.
  5. Add in the chicken broth and filtered water and stir again until well combined. Bring the stock pot to a boil and then cover and simmer over low heat for 20-30 minutes.
  6. Serve with fresh chopped cilantro, homemade lime crema, tortilla strips or pepitas.

Can this chili recipe be made in a slow cooker?

Yes, of course. Just add the first 7 ingredients (olive oil, white onion, red pepper, sea salt, black pepper and ground beef) and following the first 3 steps of the recipe below. Once in a slow cooker, add the rest of the ingredients and cook for 6-8 hours on low.

Can you freeze the stovetop chili recipe leftovers?

Yes, but I can almost guarantee there won’t be any left to freeze. However, you certainly can freeze leftovers and then thaw and reheat in a small saucepan on the stovetop.

Can I swap ground beef for ground turkey?

Yes, they can be swapped pound for pound, but you may want to add in a little bit more taco seasoning to offset the taste of the ground turkey.

What are some great toppings for my chili?

Be creative! You can make homemade lime crema, add chopped cilantro, pepitas, fresh chopped avocado or tortilla strips.

What should I server with my stovetop chili recipe?

We highly recommend checking out our homemade tortilla chips recipe or making homemade cornbread. Of course, organic blue or white corn tortilla chips are delicious too – just watch the ingredients!

My Mexican-inspired Chili Stovetop Recipe has robust flavors, classic ingredients and a simple stovetop method makes this recipe a weeknight favorite in our house.

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 cup white onion, diced
  • 1/2 cup red pepper, diced
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 3 garlic cloves, minced
  • 1 lb grass fed/grass finished ground beef*(90/10 or 93/7 is ideal)
  • 2 tablespoons homemade taco seasoning
  • 1 can organic black beans, drained*
  • 1 can organic pinto beans, drained*
  • 15 oz organic tomato puree
  • 10 oz diced organic tomatoes
  • 1 1/2 cup frozen organic corn
  • 2 cups organic chicken broth
  • 2 cups filtered water

Notes

  1. Ground beef – We love using ButcherBox for our grass fed, grass finished beef. You can use any local ground beef, just look for 90/10 or 93/7.
  2. Black and pinto beans – Always look for organic and bpa-free cans. Also, if you don’t have or like one of these types of beans, then add in 2 of the other. For example, if you don’t like black beans, add in 2 cans of pinto!
