If you are looking for a tasty way to cool off this summer then this Virgin Homemade Pina Colada Popsicle Recipe is definitely the thing to whip up! The recipe is dairy free, is sweetened only with “whole” fruit (frozen pineapple and medjool dates), has just 4-ingredients, takes less than 5-minutes to make and is most definitely a kid-friendly clean eating treat. I made the popsicle recipe just this week when our niece, Maya, came to visit. Maya and I had initially spent the day shopping and doing a girls lunch but came back to the house sweltering hot (90 degree Florida weather is not the best for shopping!) and decided to have a few friends over for a late afternoon pool party. We didn’t have any food prepared but the kids all definitely needed something to eat. Although I was pretty low on groceries, the one food we had plenty of was bags and bags of frozen pineapple. After seeing all the pineapple, Maya came up with the idea to make the Homemade Pina Colada popsicles…. Homemade Pina Colada kids cooking I decided to put all the kids to work in the kitchen and in addition to making the homemade pina colada popsicles, they also decided to whip up this DIY Banana Face Mask (that’s Mia working on mashing the bananas for the face mask in the photo to the left.) Both the popsicles and face mask turned out to be a HUGE hit with the kids. The kids loved the popsicles so much that they actually made (and ate!) three batches. I normally would feel terribly guilty about letting kids eat so many popsicles but since these were made without sugar and perfectly aligned with the clean eating diet guidelines we talk about in our book, I didn’t feel a bit guilty 😉 homemade pina colada2

How to Freeze Your Homemade Pina Colada Popsicles in 7 Minutes Flat

Add a Splash of Rum…

Although this recipe is virgin for the kids, you can always add a splash of rum per pop if you want to make the popsicles for grown-ups. You need to be careful not to add too much alcohol if you want to make popsicles though because alcohol doesn’t freeze (you could always drink it though!) If you want to add rum and also make the popsicles though, I would just use 2 cups of frozen pineapple and 1/4 cup rum—that should work! Virgin Homemade Pina Colada Frozen Pops Print

Ingredients

  • 2 1/4 cups frozen pineapple
  • 1 cup coconut “cream” (see notes below)
  • 6 pitted medjool dates
  • 2 1/2 teaspoons pure vanilla extract

Instructions

  1. Place all ingredients in a high-speed blender (such as a Vitamix) and process until smooth and creamy.
  2. Transfer mixture to a popsicle mold and freeze.

Notes

Coconut “Cream” is the thick, rich and non-watery part of canned coconut milk. To get the “cream” you need to refrigerate your coconut milk for 5 or 6 hours or pop it in the freezer for at least an hour. Once the coconut milk is cold, carefully remove the top with a can opener and use a spoon to scoop out the hardened coconut “cream” off the top. The “cream” is what you will be using for the Pina Colada Popsicles. You can reserve the liquid water for smoothies. Also, for what it is worth, I always seem to have the easiest time getting the cream from Thai Kitchen brand.
