White Chicken Chili is Quick to Make
This white chicken chili recipe has actually become one of my favorite grocery store day dinner recipes.
What’s a “grocery store day dinner recipe?” It’s a recipe that is super easy to make and cooks in a hurry. That’s because on grocery store days I am usually not in the mood to cook an elaborate meal. The best part about this recipe is that you can grab a rotisserie chicken on the way out of the grocery store.
More so, I definitely don’t want to wait all day for my dinner to simmer or roast. Because of this, one pot wonders using rotisserie chicken that cook in 30 minutes are perfect for grocery store days.

How to Make Delicious Dairy Free White Chicken Chili Recipe
Conventional White Chicken Chili is loaded with dairy. Some recipes call for butter, cheese, cream sauce, cream cheese or sour cream. And of course, this white chicken chili should naturally have a creamy texture and flavor to it.
However, we are big fans of clean eating, which means we are not fans of dairy. You can read our 10 reasons why here. So, for creamy chili’s like this recipe, I knew I had to come up with a substitute.

How to Make Homemade Sour Cream
I realize the idea of making your own sour cream might not sound like the most time-efficient idea on the planet, but trust me nothing could be easier!
It takes no more than five minutes to whirl together just six ingredients in a high speed blender. My recipe calls for: macadamia nuts, water, lemon juice, honey, salt and extra virgin olive oil.
The dairy free sour cream recipe yields 1 3/4 cup and the white chicken chili recipe calls for just 3/4 cup. So you’ll have plenty of leftover sour cream to use on baked potatoes, as a sandwich spread, to dollop on soup, mix in with scrambled eggs, etc.
And you can always make the sour cream in advance since it lasts for up to a week if stored in a covered container in the refrigerator.

This recipe for white chicken chili is delicious, and I’m so happy I made it. One bowl wasn’t enough. The only thing I did differently was to add half of a red onion that I had in the fridge. I didn’t want it to go to waste, so I used it in addition to the Spanish onion. Thank you for your recipes and website. ?
Thank you Jane — it is such a blessing to read comments about my recipes here. And what a great swap — red onion is so delicious and I can definitely see how that would would great. Thank you again for taking the time to comment.
I left out the dairy free sour cream, and it was delicious without it! A wonderful hearty recipe. I made it for dairy/tomato intolerant family members, and all of the dairy lovers enjoyed as well. Great and easy recipe.
Thank you so much Deborah — I’ve left out the sour cream several times too and it’s just as delicious! It reminds me of why dairy free is mostly easy! So glad everyone enjoyed the chili!
I don’t know if I missing something but I do not see in this recipe where you add the chicken.
Lisa, If you are using rotisserie chicken, you can add the chicken in when you add the corn and beans — or wait until after the soup has boiled 30 minutes and let the chicken cook on low for a few minutes. Let me know if you have any other questions.
I made this in the pressure cooker with uncooked chicken, fresh corn and OMITTED THE SOUR CREME BECAUSE i DON’t EAT NUTS. iT WAS DELICIOUS and has been my lunch all week. Thank you!
Oh my gosh! I am SO happy to hear how much you liked it. Thank you for taking the time to let me know 😉
I made this today using leftover Thanksgiving turkey. I smoke my turkey so the chili had a nice smoky taste. It was delicious. I used vegetable broth (i had it in the pantry) instead of the chicken broth. I look forward to making this agin next time I have extra turkey or chicken. Thanks for the great recipe.
Hi Laura! I’m so happy you liked it =) Thank you for letting me know!
this looks so good–I’m Wondering about the store bought rotisserie chicken…..which store(s) would you get them from? Costco?
Thank you Ann! Yes, we are pretty crazy for it over here. I actually just made it today using leftover Thanksgiving turkey and it’s even better than with the rotisserie chicken! But usually I just buy my Rotisserie chicken from Whole Foods Market, Earth Fare or this local restaurant called C.R. Chicks. I typically only buy pasture-raised chicken but unfortunately I can’t seem to find any stores that sell a pasture-raised rotisserie chicken. You could always also just roast a pasture-raised chicken and use that too!
Thank you so much! I appreciate your answering questions and all your help with the details 🙂
you are welcome Ann =)
