I will be the first to admit that one of the reasons I love salads so much is because they’re basically fail proof! Yes, there are some mediocre, boring salads out there, but a truly distasteful salad is something I’m yet to experience. With salads, there really aren’t any rules, and your creativity and preferences can run free!

The same rules apply to the “perfect arugula salad recipe”…there really isn’t one! While the combination of ingredients and amounts used in this recipe are based off of my preferences, feel free to customize, and really make this dish your own!

Like I spoke about earlier, this salad is loaded with phytonutrients and healthy fats, making it just as healthy as it is delicious. Here are the combination of ingredients that make this spicy and fresh salad so nutrient-dense.

Arugula is full of calcium, potassium, and folate, and a quite impressive list of vitamins. While many salads begin with a bed of lettuce, the arugula in this salad gives this recipe the perfect subtle hint of spice to accompany the fresh flavor of raw greens.

Apples

I absolutely love fruit on my salads, so much so, that I can’t remember that last time I created a salad without fruit! Adding apples not only creates that sweet and salty dynamic I love, but it also adds extra prebiotics, polyphenols, and so much more!

Red Onion

I have been obsessed with red onion lately. I’m not sure what it is, but the slightly sweet yet strong bite of a red onion just adds so much to every dish! I especially love red onions raw, like on this salad. They’re also full of antioxidants, and can help to boost the immune system, and control inflammation.

Avocado

I simply can not get enough avocados! Filled with potassium, fiber, and omega-3 fatty acids, this creamy fruit takes this salad to the next level!

Walnuts

Walnuts are another amazing source of omega-3’s, and also have been studied to support healthy brain-function, decrease inflammation, and so much more! They’re also just super delicious, and offer that crave-worthy crunch we love so much.

Vegan Feta
