Creamy and delicious, Chia Pumpkin Pudding is perfect for fall. Made with coconut or almond milk, pumpkin puree and pumpkin pie spice.

Ingredients

1 1/2 cup nut milk (I used almond milk)
3/4 cup pumpkin puree
1/4-1/2 cup organic chia seeds (see notes)
3 tablespoons maple syrup
1 teaspoon vanilla extract
1/2-1 teaspoon pumpkin pie spice
Optional: Whipped Coconut Cream

Instructions

In a large mixing bowl, combine the milk, pumpkin puree, chia seeds, maple syrup, vanilla extract and pumpkin pie spice.
Whisk together for about 2 minutes. Let rest for 2 minutes and then repeat as needed until the mixture begins to thicken.
Cover the mixing bowl or place in individual glass cups and place in the fridge until it firms, about 1 hour or overnight.

Notes

For thicker Chia Pumpkin Pudding, add in an additional 1/4 cup of chia seeds.
