Barbeque Pizza

Instructions

Homemade Gluten Free Pizza Crust

  1. Preheat the oven to 400ºF, and line a pizza pan with parchment paper.
  2. Combine gluten-free flour and coconut sugar in a large bowl. Mix to combine.
  3. Add in baking soda, apple cider vinegar (pour on top of baking soda), salt, olive oil, and water.
  4. Using an electric mix, mix until well combined, and a dough forms (as all gluten-free flours are different, the amount of water needed to form a dough may vary. Add 1 tablespoon of additional water at a time until proper texture is achieved).
  5. Place dough on parchment paper lined pizza pan, and top with another piece of parchment paper. Using a rolling pin, roll dough until around 1/2 inch thick. 
  6. Remove top layer of parchment. Wet hands, and use to continue shaping pizza crust until desired shape is achieved. 
  7. Place in oven for 10-12 minutes, or until golden.

Toppings

  1. While dough is baking, begin making barbeque sauce and vegan cheese (if making from scratch) and slicing vegetables. 
  2. Once vegetables are thinly sliced, heat avocado oil in a skillet on medium heat. Add red peppers, mushrooms, and onions into skillet, and quickly saute for around 5 minutes, until just beginning to soften. Remove from heat.
  3. Once pizza crust is finished baking, remove from oven, and top with barbeque sauce, red peppers, mushrooms, pineapple chunks, onions, and vegan cheese.
  4. Place back in the oven on 400ºf for 12-15 minutes. 
  5. Remove from oven, slice into pieces, and serve warm! Enjoy!

Notes

Gluten Free Crust

While you can make a fairly quick and easy, gluten-free crust at home, if you’re looking to cut down on ingredients, gluten-free crust mixes like Bob’s Red Mill Pizza Crust Mix are great options.
