The Healthiest Rice “Pudding”

Slightly sweet, and a healthy source of satisfying carbs, I made this Recipe for Rice Pudding easy to follow. It serves perfectly as a dessert, snack, or breakfast!

  • 8 organic prunes
  • ½ cup organic coconut milk
  • ¼ cup water
  • ¼ teaspoon pure vanilla extract
  • 1 ½ cups cooked black rice
  • 2 tablespoons hemp seeds
  • Cinnamon, to taste
  • Nutmeg, to taste
  • Unrefined sea salt, to taste


  1. Begin by preparing a saucepan, and adding black rice and water. Follow the instructions on the back of the bag, as cook times may vary. (As a general rule, rice should be brought to a boil, and covered and simmered for 30 minutes).
  2. While rice is cooking, place prunes, coconut milk and water in a small saucepan and bring to a boil. Reduce heat to simmer and cook for 4-5 minutes, or until prunes are soft.
  3. Add vanilla extract, cooked black rice, hemp seeds, cinnamon, nutmeg and salt to taste.
  4. Use a handheld stick blender to process until smooth and creamy.
  5. Enjoy warm, or chill and enjoy!
