  • 1 cup spelt flour (I like sprouted spelt flour by One Degree Organic)
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon Pink Himalayan sea salt
  • 3/4 cup coconut sugar
  • 3 VERY RIPE (super soft) bananas, mashed
  • 1 organic, pasture-raised egg, whisked
  • 3/4 cup HOT water
  • 1/4 cup unrefined, organic red palm oil (OR extra virgin coconut oil)
  • 1 teaspoon pure vanilla extract
  • 3/4 cup chopped raw walnuts


  1. Preheat oven to 350 degrees. Lightly oil the bottom and sides of a 9 x 5 -inch loaf pan.
  2. In a medium sized mixing bowl, mix together the flour, baking soda, salt and sugar.
  3. In a separate mixing bowl, add the mashed bananas, egg, water, oil and vanilla; use a fork to blend ingredients until smooth and creamy.
  4. Add the wet ingredients to the dry. Stir in the walnuts. Pour the mixture into the loaf pan.
  5. Bake for 1 hour.
