Instructions

  1. Turn your waffle maker on to your desired heat level.
  2. Add the eggs, water, vanilla extract, coconut cream and dates to a high speed blender and process on high for 1 full minute.
  3. Add the gluten free flour, baking powder and baking soda to the blender and process for another 30 seconds or so, or until all ingredients are well blended.
  4. Carefully pour the batter into your waffle iron in batches and cook according to manufacturers directions (lean toward the waffles being a little deep golden and crisp!). Serve immediately.
  5. Not ready to make them quite yet? Transfer the waffle batter to a mason jar and refrigerate until you are ready to make the waffles. The batter will last up to 3 days.

Notes

Coconut “Cream” is the thick, rich and non-watery part of canned coconut milk. To get the “cream” you need to refrigerate your coconut milk for 5 or 6 hours or pop it in the freezer for at least an hour. Once the coconut milk is cold, carefully remove the top with a can opener and use a spoon to scoop out the hardened coconut “cream” off the top. The “cream” is what you will be using for the waffle recipe. You can reserve the liquid water for other smoothies.
