Place a yellow potato on a cutting board between two metal skewers (or something of similar height) that leaves about 1/4 inch at the bottom. Slice the potato into thin slices. Then repeat until all the potatoes are cut.
Combine the olive oil with dried parsley. Add salt and pepper, to taste.
Using a silicone brush, dip into the oil mixture and brush the potato slices and get in between each slice.
Place on the baking sheet with at least 1″ of room around each potato to allow even baking. Then, bake until tender and crisp, 55 to 60 minutes. If you want to be really sure they are completely done, remove a small slice from the center of one of the potatoes.
