Recipe for Hasselback Potatoes make the most beautiful side dish to a holiday meal. These potatoes bake perfectly in under 1 hour.

Ingredients

  • 68 medium yellow potatoes, scrubbed
  • 1/2 cup extra virgin olive oil, like this one
  • 1 tablespoon dried parsley
  • Sea salt and fresh ground pepper, to taste
  • OPTIONAL: Fresh parsley, chopped when served

 

Instructions

  1. Preheat the oven to 450 degrees
  2. Place a yellow potato on a cutting board between two metal skewers (or something of similar height) that leaves about 1/4 inch at the bottom. Slice the potato into thin slices. Then repeat until all the potatoes are cut. ecipe for hasselback potatoes
  3. Combine the olive oil with dried parsley. Add salt and pepper, to taste.
  4. Using a silicone brush, dip into the oil mixture and brush the potato slices and get in between each slice. ecipe for hasselback potatoes
  5. Place on the baking sheet with at least 1″ of room around each potato to allow even baking. Then, bake until tender and crisp, 55 to 60 minutes. If you want to be really sure they are completely done, remove a small slice from the center of one of the potatoes. ecipe for hasselback potatoes
