Recipe for Delicata Squash with Fresh Rosemary

Quick and savory recipe for Delicata Squash made with fresh rosemary, olive oil and sea salt. The perfect vegan and vegetable side dish.

Ingredients

  • 23 delicata squash*
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt
  • 23 rosemary sprigs, stem removed

Instructions

  1. Preheat the oven to 425 degrees and set out a stoneware baking pan for roasting.
  2. In a large mixing bowl, add the delicata squash. Drizzle with olive oil, add the sea salt and rosemary. Mixing together with a wooden spoon until well combined.
  3. Place the delicata mixture on the baking pan in a single layer. Roast for 18-20 minutes and then turn over. Return to the oven and roast for an additional 8-10 minutes.

Notes

To prepare the delicata squash:

  1. Wash the squash off thoroughly
  2. Cut off the ends and then slice in half lengthwise. Remove the seeds and pulp.
  3. Flesh side down on a cutting board, cut into 1/2 inch thick pieces.
