Italian Night! Quick and Easy Dinner with 20-Minute Marinara

Ingredients

  • •1 tablespoon plus 2 teaspoons cold-pressed extra virgin olive oil
  • •6 cloves garlic, minced
  • •1 cup finely chopped Spanish onion (or another mild onion)
  • •1 cup finely chopped celery
  • •1 cup finely chopped carrots
  • •Unrefined sea salt, to taste
  • •1 teaspoon oregano
  • •1 box (24.46 ounces) BPA-free Pomi brand chopped tomatoes (or other BPA-free brand)
  • •1 jar (24 ounces) Rao’s Marinara

Instructions

  1. Heat the oil in a large heavy saucepan over medium heat; add the garlic and onions and sauté until the onions are translucent, about 8 or 10 minutes. Add the celery, carrots and salt; sauté until the vegetables are soft, about 8 minutes or so. Add the oregano, boxed Pomi Tomatoes and jar of Rao’s. Simmer, uncovered, over low heat for about 10 minutes, or until sauce thickens. Season with additional salt to taste.
