Savory Pate Pumpkin Seed Recipe

  • 1 tablespoon unrefined macadamia nut oil or organic extra virgin coconut oil (such as Barlean’s) *coconut oil if nut free
  • 2/3 cup finely chopped shallots
  • 1 cup shredded carrots
  • ¼ cup chopped fresh sage
  • Unrefined sea salt (to taste)
  • ¼ cup hemp seeds
  • 2 tablespoons raw pumpkin seeds
  • 2 tablespoons fresh lemon juice
  • 3 cloves chopped garlic

Instructions

  1. Heat the oil in a heavy skillet over medium heat; add the shallots, carrots and sage and sauté until vegetables are very soft, about 5 minutes. Season with salt to taste.
  2. Transfer shallot and carrot mixture to a Vitamix. Add hemp seeds, pumpkin seeds, lemon juice and garlic. Process until well blended but still somewhat textured. Find something to spread it on and enjoy!
