Monster Cookies

These cookies are loaded with oats, fruit, and seeds, meaning that they pack in just as much nutrition as they do sweetness.

  1. Preheat oven to 375ºF, and line a baking sheet with parchment paper.
  2. Combine sunflower seed butter, vanilla extract, eggs, and coconut oil into a mixing bowl. Mix until smooth.
  3. Add in all remaining ingredients, and mix until well combined.
  4. Scoop out dough (around 1/4 cup per cookie), and place on parchment paper. Press down very slightly (keeping cookies chunky). Repeat with remaining cookies, placing at least 2″ apart. 
  5. Place in oven, and cook for 7-10 minutes, or until just beginning to brown (mine only took 7).
  6. Remove, and allow to cool completely, and store in fridge. Enjoy!

Notes

This recipe can easily be made nut-free by opting for sunflower seed butter, and using only seeds instead of nuts to fill the cookie with.
