Lentil Wraps

These Lentil Wraps require only two ingredients, five minutes of your time, and make taco night that much tastier (and healthier)!

Instructions

LENTIL WRAPS WITH LENTIL FLOUR

  1. Begin heating skillet on low/medium heat with enough avocado oil (or oil of choice) to coat the bottom.
  2. Mix ingredients until smooth.
  3. Once skillet is hot, add 1/4 cup of batter to the middle of the skillet. If a very thin wrap is desired, you can use a spoon to spread thinner on the skillet.
  4. Allow to cook until bubbles begin appearing around the rim of the wrap (mine take 30 seconds to 1 minute).
  5. Flip, and repeat step 3, this time until a spatula can easily slide underneath wrap (30 seconds to 1 minute) *see notes
  6. Remove from heat, and cover with paper towel to keep warm.
  7. Add desired toppings, and serve. Enjoy!

LENTIL WRAPS WITH WHOLE LENTILS

  1. Begin by rinsing lentils, and then combining with water in a large bowl. Cover, and leave at room temperature overnight (around 8 hours).
  2. Add contents (without draining) to a high-speed blender. Blend until smooth.
  3. Heat a skillet with avocado oil on low/medium heat.
  4. Add 1/4 cup of batter to skillet, and spread to desired thickness. Allow to cook until bubbles begin appearing around the rim of the wrap (mine take 30 seconds to 1 minute).
  5. Flip, and repeat step 4, this time until a spatula can easily slide underneath wrap (30 seconds to 1 minute) *see notes
  6. Remove from heat, and cover with paper towel to keep warm.
  7. Add desired toppings, and serve. Enjoy!

Notes

*I always err on the side of less time when making these wraps, as overcooking will create a crisp, and stiff wrap.
