Lamb Stew Instant Pot

This recipe takes a new approach to traditional lamb stew. Loaded with pasture-raised lamb, carrots, onions, and celeriac, this Lamb Stew is simple and easy on the stomach while still being hearty, and filling! An easy, one-dish recipe great for dinner!

Ingredients

  • 1 large onion
  • 1 medium/large celeriac
  • 1 pound baby carrots
  • 3 pounds pasture-raised lamb leg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • 4 cups chicken broth

Instructions

  1. Slice onion into large chunks. Add to Instant Pot. 
  2. Using a knife, peel celeriac, and cut into small chunks. Add on top of onions.
  3. Rinse and add baby carrots to Instant Pot.
  4. Cut all of the excess fat off of your lamb leg. Cut into large, bite-sized chunks. Place in Instant Pot.
  5. Add in spices, salt, and chicken broth. Mix to combine ingredients. 
  6. Place Instant Pot on high for 50 minutes. 
  7. Release steam and serve warm. Enjoy!
