Ingredients

  • 1/4 cup extra virgin olive oil
  • 1 onion, chopped
  • 8 cloves garlic, crushed
  • 4 carrots, chopped
  • 3 celery stalks, chopped)
  • 1 cup shiitake mushrooms, stems removed and chopped
  • 1 zucchini, chopped
  • 1 cup frozen butternut squash
  • 1 tablespoon dried oregano
  • Unrefined sea salt, to taste
  • 4 tablespoons tomato paste
  • 2 tablespoons coconut palm sugar
  • 1 – 28 ounce can diced tomatoes
  • 1/2 cup vegetable broth
  • 1 bay leaf
  • 1 – 12 ounce roasted red peppers, rinsed and drained

Instructions

  1. Heat the oil in a large saucepan over medium heat. Add the onions, garlic, carrots and celery; saute for 5 to 6 minutes.
  2. Add the mushrooms and saute until soft, 4 to 5 minutes. Add the zucchini and saute until soft, 2 to 3 minutes. Add the butternut squash and saute until thawed, 2 to 3 minutes.
  3. Stir in the oregano, salt, tomato paste, coconut palm sugar, diced tomatoes and vegetable broth. Add the bay leaf. Simmer, uncovered, for 30 minutes.
  4. Remove the bay leaf. Add the roasted red peppers. Use a handheld stick blender to process until smooth and creamy. Serve warm.
