1/2 lb chicken (chopped coarsely (you might also shred the chicken after cooking it unchopped if you prefer))
1 32 oz carton organic chicken broth
1 32 oz carton organic vegetable broth
1 onion (chopped)
3 cloves garlic (minced)
4 carrots (chopped)
4 stalks celery (chopped)
2 cups of frozen peas
4 green onions (minced (to garnish))
1/2 lemon
Real Salt and pepper to taste
1 bay leaf
1 tablespoon extra virgin olive oil
Instructions
Saute onion, garlic, celery, carrots, and bay leaf in the olive oil on medium heat for three minutes.
Add the broth and lemon juice and bring to a boil.
Add the chicken and the barley and bring to a boil again.
Add the peas.
Simmer for ten minutes, or until barley is soft.
Season with salt and pepper and garnish with green onions.
