DONUT HOLES RECIPE INSTRUCTIONS:

  1. Preheat the oven to 350 degrees. Add a little coconut oil to the donut hole pan and set aside.
  2. In a glass measuring cup, combine the vinegar with the milk and set aside.
  3. In a high speed blender or food processor, add the old fashioned oats, coconut sugar, cacao powder, baking powder and salt. Process until oats are the consistency of flour and all ingredients are well blended. Set aside.
  4. In a large bowl, add the eggs, coconut oil and vanilla. Whisk until combined.
  5. Alternate between the flour and milk mixtures. Start by adding half of the flour mixture to the large bowl. Combine. Then add half of the milk mixture. Combine. Repeat until all ingredients are in the bowl.
  6. Let the batter rest for about 10 minutes to allow time for the oatmeal mixture to soak up any excess liquid. Should be a little thicker than cake batter.
    • If too thick, add 1 tablespoon of nut-based milk until the right consistency.
    • If too thin, add a little more oat flour or gluten free flour to thicken. Again, 1 tablespoon at a time until you’re satisfied with the consistency.
  7. Using a small scoop, place the batter into the donut hole pan. 
  8. Bake for 12 to 15 minutes, or until a toothpick inserted in the middle comes out clean. Remove donuts from pan and let cool on a wire rack.
    • While your donut holes recipe bake, make the Chocolate Ganache.

This dough can also be used for Chocolate Donuts using this donut pan.

RECIPE FOR CHOCOLATE GANACHE INSTRUCTIONS:

  1. Place a 1/3 cup coconut oil and chocolate chips in a small saucepan; heat over low-medium heat until chocolate starts to melt. Stirring regularly with a stainless steel whisk.
  2. Add the cacao powder, coconut sugar and 2 tablespoons nut-based milk. Continue stirring until combined.
  3. If too thick, add 1 tablespoon of nut-based milk at a time until the right consistency. Keep in mind, the ganache does harden when removed from the heat.
  4. Continue stirring until well combined. Turn off the heat and add the vanilla.
  5. Glaze over the tops of the donut holes recipe or put a few tablespoons in a small glass bowl for dipping.
