No Bake Cookie Oatmeal taste JUST like No Bake Cookies! Healthy and full of fiber, iron, magnesium, antioxidants. Make in less than 10 mins.

Ingredients

  • 1 cup old-fashioned rolled oats
  • 2 cups water
  • 1/4 teaspoon sea salt
  • 3 tablespoons coconut butter
  • 2 tablespoons raw cacao powder
  • 1/4 cup pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 1/4 cup dairy-free mini chocolate chips
  • 1/4 cup slivered raw almonds

Instructions

  1. In a small saucepan, add the oats, water and sea salt. Bring to a boil, then reduce heat to low.
  2. Stir in the coconut butter and cacao powder and simmer uncovered for 3 to 5 minutes until thickened, stirring occasionally.
  3. Remove from heat and stir in the vanilla and maple syrup.  Top with the chocolate chips, raw almonds and a drizzle of maple syrup. Serve warm.
