Sugar-Free Cinnamon Streusel Muffins

These Sugar-Free Cinnamon Streusel Muffins are not only gluten and dairy-free, they’re also egg-free and sugar-free as well!

Instructions

  1. Begin by preheating the oven to 350ºF and lining a 12 cup muffin pan with baking cups.
  2. Combine the ingredients for the flax egg in a small cup or bowl and allow to sit for 5 minutes.
  3. Combine all dry ingredients in a large mixing bowl.
  4. Add in all liquid ingredients and mix well until smooth.
  5. Using equal portions, scoop muffin batter into cups.
  6. Mix all ingredients for crumble topping. Topping should be crumbly but squishy when pinched. If more dry ingredients are needed, rotate adding in 1 teaspoon of tigernut flour and 1 teaspoon of coconut flour at a time until desired texture is reached. 
  7. Using fingers, equally distribute crumble on top of muffins.
  8. Allow to bake for 30-35 minutes, or until toothpick comes out clean. 
  9. Remove from oven and allow to cool. Enjoy!
