Sugar-Free Cinnamon Streusel Muffins
One of the biggest adjustments when cutting foods out of your diet is getting use to the inevitable difference in texture. While recreating the flavor is often attainable, depending on the food groups needing to be avoided, texture can be a different story. As gluten, dairy, and eggs trigger inflammation in my body, these three foods cut out combined, alongside the fact that my body is selective on the carbs it tolerates, makes baking especially difficult. That’s why I am so incredibly excited to share this recipe! The combination of flours in this recipe, alongside the perfect balance of liquids somehow creates the most delicious, gluten, dairy, and egg-like texture I’ve had in years! Soft and chewy without being gummy or soggy, this recipe is a true winner!

Why Sugar-Free?
Here at Clean Cuisine, we believe, in general, the body’s need for regularly consuming healthy carbohydrates, which includes natural sugars! After all, glucose is our bodies easiest, most efficient source of energy. I, however, have been struggling with some health issues over the past few years that have required me, for the time being, to avoid all sugar, even natural. This was a real bummer for a while as all of my favorite recipes were made with either fruit, or other natural sweeteners like coconut sugar, dates, or honey! While this proved to be a major obstacle for a while, I finally feel as if I’ve mastered the sugar-free, and sugar-alcohol free approach to still enjoying sweets from time-to-time.
The Problem with Sugar-Alcohols
Something I see often is people needing to remove or cut down on sugar for whatever reason, only to replace the sweets in their diets with sugar-alcohols. While they’re solving one problem, they often instead now experience digestive issues, headaches, and more. The digestive issues result because of sugar-alcohols slow digestion process which can feed gut bacteria that leads to fermentation and thus gas, as well as pulling extra water into the colon resulting in diarrhea. The headaches may be due to the chemicals in many sugar-alcohols, or alternatively, dehydration from diarrhea that they may cause. Either way, sugar-alcohols are problematic for many people, and I personally choose to avoid them whenever possible!
The Alternative to Sugar-Alcohols
While there are many alternatives to sugar-alcohols, my favorites are stevia and monk fruit for the fact that they are naturally derived and found in nature, and appear to rarely cause significant issues for most people. Stevia is also 200-400x sweeter than table sugar while monk fruit is around 250x sweeter than table sugar, meaning you only need very small amounts.
How to Make Cinnamon Streusel Muffins
Making Cinnamon Streusel Muffins is so incredibly simple and quick! So much so that even with my limited baking time, I make these every week! Some of the ingredients in this recipe can be difficult to find in store depending on what grocery shops you have available nearby. Instead of searching in store, I normally make a quick Amazon order which results in larger quantities and much more inexpensive options!

Ingredient Swaps
- Don’t have both monk fruit and stevia? These can be swapped 1-for-1! Additionally, if you don’t have liquid stevia, you can use powdered instead! It is important to note that the crumble on top MUST use a powdered sweetener to turn out correctly.
- I use flaxseed meal in this recipe as an egg replacement. If you don’t have an issue with eggs, you can simply use real eggs instead!
- Plant-based milk can be swapped with any milk if you consume dairy.
- Coconut oil is the perfect sub for vegan butter, although it won’t have that buttery flavor you’ll find in the original recipe.
Steps to Make Cinnamon Streusel Muffins
- Begin by mixing the flax egg and setting aside.
- Combine all dry ingredients.
- Combine all wet ingredients.
- Pour wet ingredients into the dry ingredients and mix well!
- Pour into lined muffin pans.
- Melt your vegan butter and combine ingredients for crumble. Distribute on top of muffins!
- Bake and enjoy!

Ingredients
Muffin Batter
- 1.5 cups tigernut flour
- 1 cup white rice flour
- 1/2 cup coconut flour
- 4 flax eggs
- 4 tablespoons golden flaxseed meal
- 12 tablespoons water
- 1 teaspoon monk fruit extract powder
- 1 teaspoon liquid stevia
- 2 teaspoons cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1 cup plant-based milk
- 1/2 cup melted vegan butter or melted coconut oil
- A splash of vanilla extract
Crumble Topping
- 1/3 cup melted vegan butter
- 2 tablespoons tigernut flour
- 2 tablespoons coconut flour
- 1/2 teaspoon cinnamon
- 1 teaspoon monk fruit extract powder
Instructions
- Begin by preheating the oven to 350ºF and lining a 12 cup muffin pan with baking cups.
- Combine the ingredients for the flax egg in a small cup or bowl and allow to sit for 5 minutes.
- Combine all dry ingredients in a large mixing bowl.
- Add in all liquid ingredients and mix well until smooth.
- Using equal portions, scoop muffin batter into cups.
- Mix all ingredients for crumble topping. Topping should be crumbly but squishy when pinched. If more dry ingredients are needed, rotate adding in 1 teaspoon of tigernut flour and 1 teaspoon of coconut flour at a time until desired texture is reached.
- Using fingers, equally distribute crumble on top of muffins.
- Allow to bake for 30-35 minutes, or until toothpick comes out clean.
- Remove from oven and allow to cool. Enjoy!
