Chicken Teriyaki Kabobs

If you are new to clean eating, there are some recipes that are just easier to make the transition with. This Chicken Teriyaki Kabob recipe is one of those recipes.

You don’t have to love (or even like!) eating clean to be smitten with this one. And if you are looking to get the family to eat more vegetables, this dinner has you covered! With mushrooms, peppers, zucchinis and onions, kabobs are a fun way to get the kids to eat eat more produce.

How to Make CLEAN Chicken Teriyaki Kabobs

You can’t make clean chicken teriyaki kabobs if you don’t first start with a clean teriyaki sauce. Unfortunately conventional homemade recipes for teriyaki sauce call for lots of sugar. And certainly store-bought brands are no healthier. 

Take a look at the ingredients in the popular Kikkoman Teriyaki sauce: Naturally Brewed Soy Sauce (Water, Wheat, Soybeans, Salt), Wine, High Fructose Corn Syrup, Water, Vinegar, Salt, Spices, Onion Powder, Succinic Acid, Garlic Powder, Sodium Benzoate: less than 1/10 of 1% as a preservative.

And then compare the ingredients in Kikkoman to the ingredients in my clean Homemade Teriyaki Sauce:  water, pineapple, unpasteurized soy sauce, medjool dates, ginger, raw honey (only 1 tablespoon!) and garlic.

So yes, if you want to make a truly clean chicken teriyaki kabobs then you will have to make your own teriyaki sauce.

Luckily that only takes about 5 minutes. Making homemade teriyaki sauce is as simple as putting the seven ingredients mentioned above in a high speed blender and pureeing until smooth. Easy peasy!

Make Your Chicken Kabobs with BBQ Sauce

And finally, if you just can’t spare the extra 5-minutes to make the homemade teriyaki sauce, don’t sweat it!

You can easily turn this Chicken Teriyaki Kabob recipe into BBQ Chicken Kabobs simply by swapping a clean store-bought BBQ sauce for my teriyaki sauce recipe. The store-bought brand of BBQ sauce I recommend is Primal Kitchen Classic BBQ Sauce. As mentioned above, this sauce is sweetened primarily with pureed dates.

Chicken Teriyaki Kabobs

NOTE: If you are using wooden skewers, be sure to soak them in water for at least an hour before baking.

GRILLING INSTRUCTIONS: Although this recipe is written as an oven-baked recipe, these skewers can also be placed on a grill if you choose to grill out! If grilling out, bamboo skewers must still be soaked before placing on the grill, or opt for a non-toxic metal/non-flammable option.

BAKING INSTRUCTIONS:

  1. Preheat the oven to 350 degrees. Line a rimmed baking sheet with foil and set a wire cooking rack on top of the foil-lined baking sheet.
  2. Thread the chicken, peppers, onion and mushrooms onto the skewers, alternating as you go, until all ingredients have been used.
  3. Season the the chicken and vegetables lightly with salt. (You should end up with about 12 to 15 skewers.) 
  4. Stir 2 tablespoons of the extra virgin olive oil into the teriyaki sauce.
  5. Use a basting brush to brush about half the teriyaki sauce onto all sides of the chicken and vegetables.
  6. Arrange the skewers on top of the prepared cooking rack. Transfer the skewers to the oven and cook for 10 minutes.
  7. Remove skewers from the oven and brush with the remaining teriyaki sauce.
  8. Return skewers to the oven and bake for another 10 minutes, or until chicken is cooked through.
  9. OPTIONAL: If you want your chicken or vegetables a little crispier, turn on your broiler to low. Place the skewers under the broiler for 3-5 minutes, watching closely so they don’t burn.
