My Superfood Smoothie Recipe for Girls Weekend

Superfood Smoothie Recipe

I created my Superfood Smoothie Recipe for me and my girlfriends (some of who are holding the smoothie in the photo above) because we were all in need of a serious energy booster!

This past weekend was jam-packed with non-stop activity as some of my best girlfriends from high school came to stay with us at our new house. These are girls I have known for over 25 years and with everyone now living such different lives, in different areas and with totally different schedules, it is hard to arrange these sort of weekend get-togethers where everyone can make it (and we were still missing a few.) 

Anytime you get a group of girls together who have known each other for as long as we have for a full weekend, you know there is going to be a lot of fun to be had —and not a whole lot of sleeping! So, by morning #2 we were all in need of a serious energy booster… 

My Superfood Smoothie Recipe did the trick! Nobody was feeling “camera ready” before they drank it though so the only photo I could get was of their hands lol. I did however get one good group shot the day before (see photo below) when Andy took us out on the boat (and yes, it was really a girls weekend plus Andy!)

Although you wouldn’t know it just by looking, my superfood smoothie recipe is actually loaded with greens. These days I am crazy for mache lettuce (by the way, I am convinced this lettuce will soon be the new kale!)  Mache is very mild-tasting with a lovely butter-like texture. And like all dark leafy greens, mache is loaded with nutrients. I keep seeing it pop up more and more places. But, if you can’t locate mache lettuce you can always substitute baby spinach leaves.

The only other ingredient you might have difficulty finding is the Acai Powder, by Navitas Naturals. But like the mache lettuce, this too is becoming easier and easier to locate at places like Whole Foods Market or your local natural foods store.

Ingredients

  • 2 1/2 cups very cold water
  • 4 pitted dates
  • 2 frozen bananas, cut into pieces
  • 1/2 cup raw macadamia nuts
  • 1 cup frozen organic strawberries
  • 2 cups mache lettuce (or baby spinach leaves)
  • 3 tablespoons Acai powder (I get Navitas Naturals brand)
  • 1 cup ice
  • 3 tablespoons chia seeds

Instructions

  1. Put all of the ingredients (except for the chia seeds) in a high-speed blender (such as a Vitamix) and process until smooth and creamy. Stir in the chia seeds and wait about 5 minutes before drinking. Drink cold.

Dear Ivy,

I so enjoy your newsletters and recipes.

I thought you had added cacao for sure to obtain the color for the weekend smoothies! Personally, I rarely enjoy smoothies, but I think I'll enjoy this one.
