Although this recipe is free of dairy, we most definitely did not compromise on flavor or the creamy texture of this soup. We simply swapped out the cream for a vegan alternative!

Dairy, alongside wheat flour if a recipe calls for it. Our recipe is easy, simple, and to-the-point. No long ingredient list or intricate cooking instructions for this soup. Nobody has all day everyday to spend in the kitchen, so in our book, the easier and quicker the recipe, the better!

Broccoli: Quite self explanatory, you can’t have a Broccoli Soup Recipe without broccoli! Broccoli is a high-fiber veggie packed full of antioxidants, vitamins, and minerals. Add more broccoli into your diet, and your body will thank you!

Cashews + Water: The “cream” in this Broccoli Soup Recipe is made out of just cashews, and water! While it may sound too good to be true, cashews really are the perfect nuts for making nut butters, cheeses, and cream. Instructions

  1. In a high speed blender, add the water and cashews; process until smooth and creamy. Set mixture aside.
  2. Heat the oil over low-heat in a large saucepan. Add the onions, celery, leeks and garlic; saute for 15 minutes, or until vegetables are very soft. Season with salt and white pepper to taste.
  3. Add the chopped broccoli and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 10 minutes.
  4. Add the reserved nut milk and simmer for an additional 10 minutes.
  5. Using a handheld immersion blender, puree the soup until smooth and creamy.

(Note: if you do not have a handheld immersion blender see instructions below)

OMG THIS SOUP WAS THE BOMB, EVEN MY DARIY QUEEN AN CARNIVORE OF A HUSBAND TOOK 2NDS. I had to adapt, cauliflower, chives, Xtra onion and celery. Worth the extra effort, I usually buy Pacific pureed soups. I will continue to make this and try with a little curry powder tomorrow. Thank you for the recipe.
